Morton Purex All Purpose Salt, also known as sodium chloride, is a key ingredient in baking. The only difference in this salt and common table salt is that Morton Purex All Purpose Salt doesn't contain any anti-caking agent. It is used to enhance flavor and help bring recipes together. Salt significantly increases dough and pastry texture quality. Without using salt in baking, final products are dramatically changed and can become tough and dense, as well as flat and greasy. It also impacts the fat texture in butter and controls the fermentation rate of yeast. Salt has a strengthening effect on gluten protein in dough and prevents bread from tasting bland.
As an ingredient in personal care products, sodium chloride cleans and polishes teeth and reduces mouth odor. It also imparts a flavor in oral products. Sodium chloride can also increase the thickness of aqueous (water-based) cosmetics and personal care products.
