Amorphous Silica Gel has a strong affinity for water molecules and is widely used as a desiccant. Although Amorphous Silica Gel is referred to as a Gel, it is actually a very light powder used in food products as a flow conditioner and anti-caking agent. It is recognized by the FDA in the United States as GRAS (Generally Recognized As Safe), meaning it can be added to food products without needing approval. Silica is allowed to be added to food in the US at up to 2% as permitted under 21 CFR 172.480.
