Baking Soda refers to Ingredi's food processing additive Sodium Bicarbonate. Sodium Bicarbonate is mostly used in food products as a leavening agent. It reacts with acidic components in batters, causing carbon dioxide to be released, which causes expansion of the batter and forms the characteristic texture and grain in pancakes, cakes, cookies, breads, and other baked and fried foods.
