Lecithin
Lecithin refers to Ingredi's food processing additive Lecithin. This food additive is use as a leavening agent and is an outstanding emulsifier. Lecithin is used in many food products to provide a creamy texture and resist separation in products such as margarine, cheese, chocolate and Ice cream. It also alleviates stickiness in breads and is often used in cooking sprays.
