CN40H is a Hydroxypropyl Methylcellulose that is considered a highly viscous (4000 cPs) modified natural hydrocolloid produced out of wood pulp or cotton linter. CN-type gums are odorless/tasteless, forming soft fluid gels and reduces boil-out in fillings. They provide the best freeze/thaw stability in frozen foods and contribute to replacement of gluten, fat, and egg whites in breads/cakes due to their interfacial activity and moisture retention properties.

Applications of this product include: tortillas, ice cream, puddings, dressings,​ gluten free breads/baked goods food, pie and pastry fillings​.

AnyAddy® products are derived from natural wood pulp, meeting all the requirements of the current USP, EP and JP ‘Hypromellose’ along with Kosher and Halal Certifications.
