What Salt Is Best for My Application?

By on Sep 4th 2019

Salt, also known as sodium chloride (NaCl), is one of the most common ingredients you will find in a kitchen. While salt is common in cooking, it is also regularly found as an ingredient in foods and beverages, cleaning solutions, and medical solutions, among other applications.

Salt has a variety of applications across all industries. It seasons and flavors food, is a natural preservative, cures meat, prevents mold, can remove stains and grease, and even helps to melt road ice in the winter. Now, with so many different uses for sodium chloride, it’s no wonder that there are so many different types of salt. You wouldn’t season your steak or your highways in the same manner, would you?

At Ingredi, we carry a variety of sodium chloride products ranging in size, shape, density, and with or without additives for all of your bakery, beverage, meat, and personal care needs. This post will breakdown the different sodium chloride products we carry so you can find the best salts for your application.

Morton Purex All Purpose Salt

This is a food-grade, granulated sodium chloride with cubic salt crystal structure. There are no additional additives added to this salt (no anti-caking agent present). Morton Purex All Purpose Salt can be used in virtually all cooking, baking, beverage, and other applications that require all-purpose salt. Purex Salt can also be used in industrial drinking water applications that require higher purity salt than solar salt.

Morton TFC Purex Salt

Like the Purex All Purpose Salt, this product is a food-grade, granulated sodium chloride with cubic salt crystal structure. TFC Purex Salt is treated with a minute amount of yellow prussiate of soda (sodium ferrocyanide), a water-soluble anti-caking agent. The anti-caking agent helps to keep the crystals flowing, resulting in a smooth pour (or shake) and homogenous mix. It can be used in virtually all applications requiring an all-purpose salt with the additional benefit of anticaking, including cereals, baked goods, meat, condiments, and nuts.

Morton Star Flake Dendritic Salt

Morton’s Star Flake Dendritic Salt is a one-of-a-kind sodium chloride product with a porous, star shape. This unique shape gives it better bendability and higher liquid absorption compared to traditional cubic salt shape. It also has low bulk density, exceptional flow characteristics, a rapid dissolving rate, and a quick, salty sensation. It contains yellow prussiate of soda for ant-icaking purposes. Dendritic salt can be used in baked goods, dry blends and seasonings, soups, meat, condiments, snacks, and sodium reductions.

Morton Top Flake Coarse Salt

Top Flake Coarse Salt is a food-grade sodium chloride, coarse screened and compacted into flat, smooth-surfaced, rectangular aggregates. The flat, coarse crystal structure provides strong adhesion that is ideal for topping crackers, chips, and breadsticks. It has been treated with a small amount of yellow prussiate of soda anti-caking agent. Top Flake Coarse Salt can also be used in coarse seasonings and rubs, Vat-salted Cheddar and Colby cheeses, and dry-curing meats.

Morton Top Flake Extra Coarse Salt

Top Flake Extra Coarse Salt is also a food-grade sodium chloride, extra coarse screened and compacted into flat, smooth-surfaced, rectangular aggregates. The flat, extra coarse crystal structure provides strong adhesion that is ideal for topping crackers, chips, and breadsticks. It has been treated with a small amount of yellow prussiate of soda anti-caking agent. Extra coarse salt is suitable for bouillon cubes, coarse seasonings, Brine-salted Italian, Swiss, Blue, and brick cheeses, and dry-cured meats.
