Hydrocolloids in Food: Methylcellulose (HPMC), Cellulose Gum & More

AnyAddy, products are different types of cellulose gum derivatives. Manufacturers often use them in snacks, baked goods, health products, gluten-free items, and dairy products. All cellulose gums start from feedstocks with wood pulp or cotton linter.

Broken down to a molecular form, the process yields a purified and refined cellulose. Once you break down natural feedstocks to cellulose, producers can use additives to change the cellulose structure. This process creates higher functional forms of cellulose, such as Carboxymethyl cellulose (CMC), Hydroxymethyl propylcellulose (HPMC), Methylcellulose (MC), and Hydroxypropyl cellulose (HPC).

We will focus on the two new additions, AnyAddy MC40H FCC (methylcellulose) and AnyAddy CN40H (Hydroxypropyl Methylcellulose):

 

AnyAddy CN40H

Also known as Hydroxypropyl Methylcellulose or HPMC, is a versatile and effective gum. You can use it as a thickener, binder, film former, and a fat or gluten replacer in gluten-free products. HPMC does not impact taste or color of a product as it dissolves clear in water solutions and other slurries.

HPMC adds value by increasing the fiber content in finished products. HPMC’s are a non-fermentable dietary fiber which can be beneficial to improve metabolic health.

 

AnyAddy MC40H FCC (methylcellulose)

A safe food additive. Manufacturers often use it in plant-based meat products, salad dressings, batters, and glazes. People use it in these applications as a binder, emulsifier, and texture improver. This is especially true when mixed with other thickening agents. These include Kappa Carrageenan, locust bean gum, and some maize starch.

Like HPMC, MC adds fiber to the nutrition of the final products. Researchers have also shown that it helps people feel fuller for longer. To activate its properties, you must heat and then cool this water-soluble polymer. This process creates the thick structure in your finished products.
