Sodium Acetate, the sodium salt of acetic acid, is a colorless deliquescent salt with a range of uses in industrial and food industries. Sodium acetate (E number E262) is used as a food seasoning to give salt and vinegar potato chips their flavoring. It is also used as a souring agent to improve taste or enhance sour taste, and is also a regulator of pH levels.
