Adipic Acid FCC is a White crystalline powder is used as a flavorant, Leavening Agent, Gelling Aid and Acidulant in food products. Adipic acid can substitute for citric acid and tartaric acid. Among these three organic acids, only adipic acid is non-hygroscopic making it a desirable choice as an acidulant in commercial baking powders. It can replace cream of tartar or Tartaric Acid which will increase the whipping quality of products containing egg white. Adipic acid also functions to contribute a sweet, tart flavor in gelatin, dressings, flavor extracts, and oils.
